Irish winter honey. The honeybee gathers nectar from ivy in autumn and into the winter. Ivy honey is crystallized honey (not runny), it has natural antibacterial properties. Bees visit the ivy flower on warm days; as the temperature drops in the afternoon, the ivy flower nectar will start to crystalize and the bees stop visiting the flower for the day.

Ivy honey can be consumed direct from the jar on a spoon. If heated, do not heat over 60 degrees, or the nutrients could be lost.
